Fudge? How? Help...pls..?

I have sweetened condensed milk but not carnation milk, i have cocoa...sugar(brown and white), vanilla,eggs and about 1/2 pkg of choc. chips.....what else do I need? am I missing something? I've never made fudge before* any help will be appreciated*

Well, I have NEVER heard of fudge made with eggs. Are you sure you mean fudge.... or do you mean brownies?



Chocolate Fudge



3 Cups white granulated (table) sugar

1 Cup milk

2 Tablespoons light corn syrup

2 squares unsweetened chocolate (baker's chocolate)

3 Tablespoons Butter or stick margarine (not spread)

1 teaspoon Vanilla extract

1 Cup chopped walnuts (optional)

In a 3 quart sauce pan, bring sugar, milk, corn syrup %26amp; chocolate to a boil, stirring constantly. Wash crystals from pan sides with a damp pastry brush.

Set candy thermometer in place and continue cooking mixture, stirring every so often, until temp reaches 238 degrees F or the "soft ball" stage.

Remove pan from heat, add the butter (margarine) and vanilla to top of mixture. Do not stir.

Set aside and allow to cool to 110 degrees F.

Meanwhile, butter a 8X8 inch pan. When candy has cooled down, begin to stir the butter and extract into the candy until the mix becomes thickened %26amp; begins to lose it's gloss.

Quickly stir in the nuts if you are adding them and pour the mix into the buttered pan.

Don't scrape the sides into the pan as it may be sugary.

Cool fudge in pan. When fudge is cooled completely...cut into squares.

BTW: The Carnation company (and a number of other companies) makes both canned "Sweetened Condensed Milk" and "Evaporated Milk".

1 (12 oz) bag chocolate chips

1 (16 oz) tub chocolate frosting

1 tsp salt

1 tsp vanilla



Microwave chocolate chips 1-2 minutes or until melted. In same bowl, stir in frosting, salt, and vanilla. Mix together until it loses its glossiness, pour into greased pan, let cool, cut into squares.



Cream cheese or vanilla frosting also works if making multiple recipes, subbing one or two of the chocolate frosting for another flavor.

Five-Minute Fudge



1 (12-oz) bag semisweet chocolate morsels

9 oz (3/4 of a 12-oz bag) butterscotch morsels

1 (14-z) can sweetened condensed milk

1 tsp vanilla extract

1 (8-oz) can walnut halves

1/2 cup (a couple of handfuls) currants



Place a heavy pot on the stove and preheat it over low heat. Add chips and milk and stir until chips are melted and milk combined. Stir in vanilla and remove fudge from heat. Add nuts and currants and stir in immediately. Spread into buttered 9” square pan.



The fudge will set up almost immediately. Chill covered in the refrigerator and slice fudge very thin when ready to serve, a little goes a long way.

MICROWAVE FANTASY FUDGE



3/4 cup butter

3 cups sugar

2/3 cup evaporated milk

12 oz semi-sweet chocolate chips



Microwave butter in a bowl until melted (about 1 minute). Stir in 3 cups sugar, 2/3 cup evaporated milk, mix well.

Microwave mixture on high 3 minutes, stir. Two minutes, stir. Three minutes, stir. Two and one half minutes, stir. Gradually stir in chocolate chips.



Add:

1 jar marshmallow creme

1 tsp. vanilla

Nuts, if desired



Mix well. Pour into greased 9 x 9 inch pan. Cool at room temperature. Makes 3 pounds.
